Soft Rava Idli with ElaichiRam Sooji

Rava idli is a quick, no-fermentation South Indian breakfast made from semolina (sooji/rava). Light, fluffy and ready in minutes with ElaichiRam Premium Sooji.
Ingredients
• 1 cup ElaichiRam Premium Sooji
• 1 cup curd (yogurt)
• 1 tsp eno / fruit salt
• 1 carrot, grated
• Salt to taste
• Tempering: mustard seeds, curry leaves, ginger
Method
1. Roast the sooji lightly, then mix with curd, salt and grated carrot to a thick batter; rest 10 minutes.
2. Add the tempering and mix in eno just before steaming.
3. Pour into greased idli moulds and steam 12–15 minutes until a toothpick comes out clean.
4. Serve hot with coconut chutney and sambar.
